High protein Gluten Free Bread

High-protein, gluten-free bread made with flax, cottage cheese, and seeds offers a powerhouse of nutrition and functional benefits. This type of bread is rich in plant-based omega-3 fatty acids from flax and seeds, supporting heart health and reducing inflammation. The addition of cottage cheese boosts the protein content, promoting muscle repair and satiety, making it ideal for active individuals or those looking to manage their weight. Being gluten-free, it’s also suitable for people with celiac disease or gluten sensitivity, offering a wholesome, nutrient-dense alternative to traditional breads.

  • 100g Gluten free oats

    50g Gluten free flour

    1 tbsp baking powder

    50g milled flaxseed

    0.5 tsp salt

    300g cottage cheese

    1 large egg (room temp)

    30ml milk or non dairy milk of choice

    100g mixed seeds

    30g chopped walnuts (optional)

Instructions…

1.Mix oats in blender until they are fine flour pop into mixing bowl

2. Add the Gluten free flour

3. Add the milled flax seed

4. Add baking powder and salt

5. Mix til well combined with a spatula

6. Then blend the cottage cheese in a nutribullet (or equivalent) and blend til smooth

7. Add to the flour mix and then add an egg and the liquid (milk or non dairy milk ). Mix until well combined

8. Add seeds and walnut pieces (if using) and mix one more time until all mixed in.

9. Then shape on a baking tray (it is sticky so use wet hands to shape it) and score with a knife along the top.

 

Bake in oven 180 for 40 mins until golden brown

This bread won’t last as long as a traditional loaf. I suggest slicing the bread once it has cooled down and freezing most of it. You can then defrost as much as you need each time.
