Warming Lentil and Sweet Potato Stew

1 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, crushed
1 medium sweet potato (about 250g), peeled and cubed
200g red lentils
1 tsp ground turmeric
1/2 tsp smoked paprika
1 x 400g tin chopped tomatoes
1 litre vegetable stock
2 handfuls spinach or kale

Instructions:
Heat olive oil in a large saucepan. Sauté onion and garlic until softened.
Add the sweet potato and spices. Cook for 2–3 minutes, stirring.
Stir in lentils, chopped tomatoes, and vegetable stock. Simmer for 25–30 minutes until lentils and potato are tender.
Stir in greens just before serving. Season to taste and add a squeeze of lemon if desired.
