Matcha Miracle Cookies With Cacao Nibs

1 cup almond flour
1 tbsp matcha powder (culinary grade)
1/2 tsp baking soda
Pinch of sea salt
1/4 cup coconut oil or tahini
2 tbsp maple syrup or 1 mashed ripe banana
1 tsp vanilla extract
1 egg (or flax egg for vegan: 1 tbsp flaxseed + 3 tbsp water)
1/4 cup cacao nibs or 85–90% dark chocolate chunks
Instructions:
Preheat oven to 175°C or 350°F. Line a baking tray with parchment paper.
Mix almond flour, matcha, baking soda, and salt in a bowl.
In another bowl, whisk coconut oil, maple syrup or banana, vanilla, and egg until smooth.
Combine wet and dry ingredients, then fold in cacao nibs or chopped dark chocolate.
Scoop 1 tbsp dough per cookie onto the tray. Flatten slightly.
Bake 10-12 minutes, or until edges are golden. Let cool completely.
