Matcha Miracle Cookies With Cacao Nibs

Discover the antioxidant-rich power of matcha in these naturally sweetened, guilt-free treats that nourish your body and satisfy your cravings. Packed with wholesome ingredients and a hint of dark chocolate, these cookies are the perfect blend of clean energy and delicious flavour.

    • 1 cup almond flour

    • 1 tbsp matcha powder (culinary grade)

    • 1/2 tsp baking soda

    • Pinch of sea salt

    • 1/4 cup coconut oil or tahini

    • 2 tbsp maple syrup or 1 mashed ripe banana

    • 1 tsp vanilla extract

    • 1 egg (or flax egg for vegan: 1 tbsp flaxseed + 3 tbsp water)

    • 1/4 cup cacao nibs or 85–90% dark chocolate chunks

Instructions:

Preheat oven to 175°C or 350°F. Line a baking tray with parchment paper.

  1. Mix almond flour, matcha, baking soda, and salt in a bowl.

  2. In another bowl, whisk coconut oil, maple syrup or banana, vanilla, and egg until smooth.

  3. Combine wet and dry ingredients, then fold in cacao nibs or chopped dark chocolate.

  4. Scoop 1 tbsp dough per cookie onto the tray. Flatten slightly.

  5. Bake 10-12 minutes, or until edges are golden. Let cool completely.

Bonus: These cookies are gluten-free, refined sugar-free, and full of antioxidants from both matcha and cacao.
