One Tray Lemon Herb Salmon with roasted veg
Simple, delicious, and ready in under 30 minutes, this one-tray salmon supper is perfect for busy weeknights. Rich in omega-3s and antioxidants, it's a nourishing meal with minimal clean-up.

Ingredients:
2 salmon fillets
1 courgette, sliced or spiralised
10 cherry tomatoes
1 red pepper, chopped
1 heaped cup (about 150g) broccoli florets
2 tbsp olive oil
Juice of 1 lemon
1 tsp garlic granules
1 tsp dried oregano or thyme
Sea salt & black pepper, to taste
Instructions:
1. Preheat the oven to 200°C (fan 180°C) / Gas Mark 6.
2. Spread all the vegetables on a baking tray, drizzle with 1 tbsp olive oil, and season well. Roast for 15 minutes.
3. Add the salmon fillets to the tray. Drizzle with remaining oil and lemon juice, and sprinkle with herbs.
4. Return to the oven for 12–15 minutes, or until the salmon is just cooked through. Serve immediately.
